Step 1
Preheat the oven to 200 degrees.

Cut the potatoes into large chunks and roast until brown.

Seal the chicken in a pan and place in a baking tray with the sweet potato and cabbage.

For the honey sauce, slice the Trex in to cubes and put in a bowl with the honey and cinnamon. Whisk for 3-4 minutes until fluffy. Pour half of this in to the baking tray.

Roast in the oven for 45 minutes until the chicken thighs are cooked through. Once cooked, remove from the oven and add the remaining sauce. Serve hot.

66 Chicken thighs skin on, bone removed
1 1⁄21 1/2 Sweet potatoes large chunks with skin on
1⁄21/2 Red chilli, finely chopped
1⁄21/2 Cabbage shredded and blanched
Sour cream and chilli sauce to serve
