Bake something with the kids

Taking part in the Trex Challenge this month we have Cheryl from Madhouse Family Reviews blog. We challenged her to bake something the kids could have fun helping out with. See her great idea below!

Festive Flapjacks

If you are looking for a simple baking project to make with the kids in the run up to Christmas, that also has the added bonus of giving you a lower fat and lower calorie alternative to mince pies, I have just the thing – Festive Flapjacks!

It also ticks the box if you need a dairy-free treat because we used Trex instead of butter.

  • 250g porridge oats
  • 75g Trex
  • 3tbsp honey or golden syrup
  • 1tbsp cinnamon
  • ½ jar mincemeat

Step 1

Melt the Trex in a microwave or in a saucepan over a low heat. Stir in the mincemeat and honey/golden syrup.

Step 2

Mix the cinnamon into the oats. Pour the mincemeat mixture into the oats and stir to combine.

Step 3

Press into a greased baking tin and cook for 20 minutes in the oven at 180° until they've gone nice and golden.

Step 4

If you want a more indulgent treat (why not, it is Christmas after all!), drizzle with melted white chocolate and top with silver balls. Aim for the chocolate so that they stick!

Cheryl's Top Tip

Put in the fridge to firm up before cutting into slices.
