Our kitchens need a little love, so this month we challenged Steph to bake something to enjoy with partners and family alike on Valentine's Day. And we reckon her sumptuous cookies do just the trick.

I love this recipe because it's easy enough to make while you've got little ones tugging at your legs, and great fun too if you can get them involved. Best of all, the end result is delicious, and makes for a delightful weekend snack or Valentine's treat.
The only drawback is you'll have the whole family wanting more!
Line 2 large baking trays with greaseproof paper and pre-heat your over to 170º (fan) or 190º/Gas mark 5.
Mix your Trex together with muscovado and caster sugar and beat until you've got an even mixture.
Beat the egg and add the vanilla extract and then slowly add the egg and vanilla mix into the Trex and sugar, continuing to beat the mixture.
Now mix in the flour, adding in the chocolate chips. Using a spoon, space evenly sized scoops of the mixture across your baking trays, making sure to leave enough space for each cookie to spread as it bakes.
Bake your cookies for about 10 minutes. Make sure that you watch them very carefully as they'll go dark quite suddenly. Allow to cool a little on a wire rack, and enjoy!
When laying out any cookie mix for baking with kids, try and keep the cookie sizes as similar as possible. I find that making different sized cookies always leads to the little ones competing for the biggest of the bunch!
