Bake something for Easter!

This month we challenged Bel from the Journeys Are My Diary blog to bake us an Easter treat. Her Easter Nest Cupcakes are adorable! They’re also perfect for an easy to make chocolatey fix!

Easter fun

Everyone knows how to make chocolate cornflake nests with eggs, but how about something a little more interesting? This Easter I made these wonderfully simple Easter Nest Cupcakes and they taste delicious.

Easy to make and easy to decorate, what more could you want?


  • 180g plain flour
  • 180g caster sugar
  • 140g Trex
  • 3 eggs
  • 1 tsp baking powder

For the topping:

  • Tub of chocolate frosting
  • Mini (or micro in our case!) eggs

Step 1

Mix together all the ingredients! I'm not one for Trex and sugar creamed first – just whack it all in and mix well.

Step 2

Divide into cupcake cases. We picked green as we figured they might look like the nest was sat in a tree.

Step 3

Having pre-heated the oven, to around Gas Mark 6, cook the mixture for 15-20 minutes, until the cakes are cooked.

Step 4

Allow the cakes to cool fully before decorating, and make a flat surface. Take a piping bag with a good wide nozzle and fill up with chocolate frosting.

Step 5

Make circles on the cake, building up an nest shape, using the frosting. Fill with eggs and tada!

Simple, quick and delicious!

Top tips

Have a look around your local supermarket for other cupcake topping ideas – jelly slices could make flower petals, sprinkles could be grass – kids will love making them!
