I can’t resist a good slice of cake. But with summer holiday season coming up it’s probably not the best time to overindulge!
This cake is filled with lots of banana goodness and, as it’s made with Trex, it’s even better as Trex is lower in saturated fat than butter.
Preheat the oven to 170°C/gas mark 4. Dissolve the cocoa powder in a bowl in 4 tbsp boiling water and leave to the side to cool down.
Mash the bananas in a large bowl and mix with the beaten eggs and vanilla essence.
Sift the flour into a separate bowl and mix in the Trex with your fingers. Add the sugar and the mixture of banana, egg and vanilla essence. Mix well with a spoon.
Separate a third of the mixture into the dissolved cocoa powder and mix.
Now you have two separate mixtures. Add random dollops of each into your cake tin until full. Swirl with a spoon to create a marbled effect. Now bake!
If you’re not watching your waistline, try with a dollop of clotted cream. It’s delicious!
